This cookbook and is a wonderful addition to any busy Mom’s kitchen, especially if she wants to get a healthy, hot dinner on the table in a short period of time - and only have ONE pot to wash!

Elizabeth Yarnell is a Certified Nutritionist who patented her cooking method - it’s that unique. Different from slow cooked meals that often produce mushy or grey veggies, her method promises colorful, crisp veggies AND fully cooked grains and meats. Dinner is on the table in 45 minutes. The individual ingredients retain their original characteristics for an appealing flavor, texture and visual appeal.

Here’s how it works: The One Pot Meals method uses an “infusion” style of cooking that uses steam to create perfectly cooked veggies, grains and meats (and even fruits if you include them) to create a balanced, nutritious dinner. You will need an enamel coated cast iron Dutch Oven to use her method. These are available online or in nicer stores. I’ve seen them at IKEA, the grocery store Publix (which carries the well known La Creuset line) and other retailers. Target also carries one, it’s a Rachel Ray line.

The cookbook is divided into cravings instead of traditional sections, which is a lot of fun. Are you in the mood for something hot and spicy, traditional and hearty, or more light and flavorful? Just flipping through the book will make your mouth water.

Even though there are dozens of delicious recipes in her book, you can use the method to create your own recipes. Just refer to the easy instructions that guide you with the proper ratios of dry versus wet ingredients and the directions for stacking the ingredients.
